Walnut-lemon cookies are easy to make, nutritious, and really tasty.
The main ingredient, walnuts, are a source of complete protein and healthy omega-3 fats.

I had planned to make almond-lemon cookies but couldn't find almonds at the store. With limited choices on the nut shelf, I spontaneously chose walnuts instead of almonds. I was a bit worried their flavor might be overwhelming, but I'm really happy with the result.
The taste of walnuts is pronounced in these cookies, so if you're not a fan, this dessert might not be for you. But if you're indifferent or like walnuts, these nutritious and simple nut cookies are worth a try.

Ingredients
  

  • 50 g Walnuts about 6 pieces
  • 20 g Peanut butter 1 tablespoon
  • 35 g Egg white 1 piece
  • 20 g Zero-calorie sweetener, e.g., erythritol 2 tablespoons
  • Lemon zest

Method
 

  1. Put the walnuts in a blender container. Blend and set aside.

  2. In the blender container, place the egg white (store the yolk in the fridge and use it for another meal within a few days), peanut butter, and grated zest of a scalded lemon. Blend to combine the ingredients. Add the crushed nuts and mix thoroughly.

  3. Lay out about 1 teaspoon of the mixture (for 1 cookie) on a baking tray lined with parchment paper. Bake in an oven preheated to 180°C (356°F) for about 12-15 minutes, checking occasionally to ensure they don't overbrown. Remove when golden.
