  • 180 g Chicken eggs 3 large pieces
  • 45 g Flour (e.g., wheat or rice flour) 3 tablespoons
  • 40 g Milk 2% ⅕ cup
  • 30 g Calorie-free sweetener (e.g., erythritol) 3 tablespoons
  • 5 g Coconut oil or other 1 teaspoon
  • Salt

Method
 

  1. Wash and dry the eggs. Crack the eggs, separating the yolks from the whites into two containers. Place the egg whites in a clean, dry, and tall container, such as a blender pitcher. Add a pinch of salt to the egg whites and beat with a mixer or kitchen whisk until stiff peaks form.
  2. In a separate container, combine the yolks, flour, milk, and sweetener. Mix thoroughly until the ingredients are well combined.
  3. Gently but thoroughly fold the yolk mixture into the egg white foam.
  4. Heat the oil and spread it on a frying pan. Transfer the mixture to the pan and smooth the top.
