- Preheat the oven to 200 degrees C. Wash and dry the avocado, then cut it in half lengthwise. Next, remove the pit and gently enlarge the spaces where the pits were, scooping out part of the flesh with a spoon. The size of the cavities should match the size of the eggs.
- Place the avocado halves skin down in an ovenproof dish or on a baking sheet lined with baking paper. Break one egg into each cavity. Season with a pinch of salt and pepper. Bake in the preheated oven for about 10-15 minutes.
- Remove when the egg white is completely set. Optionally, during baking, wash, dry and finely chop the chives. Serve the baked avocado on a plate and sprinkle with chives.
