- Finely chop the almonds and dried plums.
- In a bowl, combine oat flakes, flour, almonds, a pinch of baking soda, and a pinch of each spice: cinnamon, cardamom, ginger, pepper, cloves (or use gingerbread spice). Mix well.
- Add agave syrup/honey, oil, and plums. Mix and mash until combined. If necessary, add a little water.
- Form cookies (1 teaspoon per cookie) on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C (356°F) for about 10-15 minutes. Remove the tray when the cookies are golden.
- Enjoy warm or cold.
