In many Polish homes, carp is a mandatory element of the Christmas dinner. It is one of the most underrated fish, which, due to its incredible health benefits, should be eaten much more often than just during the holidays.

- Clean and dry the piece of fish. Wash, dry, and cut the apple into quarters (remove the seed nest). Cut each quarter into slices.
- In a small ovenproof dish, arrange a layer of apple slices.
- Then place the fish.
- Spread another layer of apple slices. Drizzle with olive oil and season with salt, pepper, and thyme. Cover with a lid or aluminum foil and place in an oven preheated to 180°C (356°F). Bake for about 25-30 minutes. After the indicated time, remove the cover and bake until browned, for another 20-25 minutes.
- Serve on a plate.
