- Clean the leeks (cut off the root end and remove the first layer of leaves), wash, dry and slice them into medium-thick rings. Peel and slice the garlic.

- Heat the olive oil in a pot. Add the sliced leeks and garlic. Sauté over moderate heat for about 5 minutes, stirring occasionally.Add water to cover ¾ of the leeks. Simmer on low heat, covered, until the leeks are tender, about 5-10 minutes. If necessary, add a bit more water or pour off excess water just before blending.

- Once the leeks are tender, blend everything with a hand blender.

- Season to taste with salt, pepper, sweetener, and lemon juice. Mix well.

- Serve on a plate.
