- Wash the potatoes thoroughly, dry them, and cut them into wedges.

- In a small bowl, place the olive oil and peeled, pressed garlic. Season with oregano, basil, hot paprika, and sweet paprika (or other favorite spices). Mix well.

- Place the wedges in the bowl with the prepared olive oil and coat them thoroughly. Each potato piece should be covered with the seasoned oil. Mix well.

- Preheat the oven to 200°C (392°F). Transfer the potato wedges to a baking sheet lined with parchment paper and place in the oven. Bake until tender, about 30-40 minutes (depending on the size of the pieces and the power of the oven). Be sure not to over-bake.

- Serve on a plate and optionally season with salt.
