Ingredients for pumpkin compote:
- Pumpkin about 1/4 of a medium piece (200 g)
- Lemon 1 medium piece (80 g)
- Calorie-free sweetener, e.g. erythritol 4 tablespoons (40 g)
- Cinnamon
- Water
Preparation of pumpkin compote:
Step 1: Wash and dry the pumpkin. Then cut a piece, remove the fibers and seeds. Peel the skin off (lay the piece on a cutting board and peel downward) and chop it into a few centimeters big, similarly sized pieces.
Step 2: Blanch the lemon briefly.
Step 3: Cut 3 slices from the lemon, and squeeze the juice from the rest.
Step 4: Pour about 0.5 liters of water into a pot along with the lemon juice. Add the lemon slices, sweetener, and a pinch of cinnamon.
Step 5: Bring to a boil, then add the chopped pumpkin. Bring to a boil again, reduce the heat, and simmer for about 5-10 minutes depending on your preference for pumpkin softness.
Step 6: Pour into a glass and consume either warm or cold.
