- Grate the cheese or cut it into small pieces. Wash, dry, and chop the bell pepper (remove inedible parts). Wash, dry, and slice the cherry tomatoes. Heat a dry pan over low heat. Place one slice of whole wheat toast bread on the pan. Evenly spread cheese, bell pepper, and cherry tomatoes on the slice.
- Cover and press down with the second slice of bread. Cook on the pan over very low heat until the bread is toasted and the cheese melts, approximately 3-5 minutes per side.
- Serve on a plate.
