Ingredients for chocolate risotto:
- Basmati rice 5 tablespoons or 1/2 a bag (50 g)
- Milk 2% almost 1/2 cup (100 g)
- Calorie-free sweetener, e.g., erythritol 2 tablespoons (20 g)
- Dark chocolate 85% 2 squares (10 g)
- Dark cocoa 1 tablespoon (10 g)
- Salt
- Water
Preparation of chocolate risotto:
Step 1: Thoroughly rinse the rice on a kitchen sieve under running cold water or place it in a bowl and fill it with water several times, stirring and draining until the water is clear.
Step 2: Place the rinsed rice in a saucepan and pour water for cooking in a 1:1 ratio (water:rice). Add milk, sweetener, and a pinch of salt. Stir well. Bring to a boil and then reduce the heat to very low. Cook covered for about 15 minutes on low heat, stirring occasionally.
Step 3: About halfway through cooking, add the chocolate.
Step 4: The risotto is ready when it thickens considerably and the rice is soft but not falling apart. Towards the end, add cocoa and mix thoroughly.
Step 5: Transfer to a convenient dish. Enjoy it warm or cold.
