Carrot, apple and raisin salad with olive oil

Ingredients
  

  • 90 g Carrot 1 medium piece
  • 150 g Apple 1 medium piece
  • 32 g Dried raisins 2 tablespoons
  • 5 g Olive oil 1 teaspoon
  • 5 g Calorie-free sweetener e.g., erythritol 1 teaspoon
  • 3 g Lemon juice 1 teaspoon
  • Salt

Method
 

  1. Place the raisins in a small container and pour boiling water over them. Adjust the amount of water to cover them all. After a few minutes, drain the excess water from the raisins (best on a sieve) and chop finely.
  2. Wash the apple, peel it, and grate it (excluding the seed pod) on a coarse grater. Immediately sprinkle with lemon juice. Wash, peel, and also grate the carrot on a grater.
  3. In a bowl, combine the apple, carrot, and raisins. Add olive oil, sweetener, and a pinch of salt. Mix thoroughly.
  4. Transfer to a convenient container.
