Kopytka, Polish potato dumplings, are made from cooked and mashed potatoes mixed with cottage cheese, flour, and eggs. Although simple to prepare, they are somewhat time-consuming, taking around 50 minutes. The potatoes must first be boiled, mashed, and slightly cooled before kneading into a light and elastic dough. However, the effort put into making them is worth it for their delightful taste, melting in your mouth.
Kopytka can be enjoyed alone or with various accompaniments such as sweet yogurt, protein sauce, butter, cream, fried onions, sauerkraut, or as a side to dishes like meat and vegetable stews, steaks, or fruit purees.

Ingredients for kopytka:
- Potatoes 2-3 small pieces (300 g)
- Low-fat quark 1/2 package (100 g)
- Flour (e.g., wheat or rice flour) 5 tablespoons (50 g)
- Salt
Preparation of kopytka:
Step 1: Cook the potatoes (check the recipe).
Step 2: Put the cooked potatoes and quark in a bowl. Pass through a potato ricer or mash thoroughly with a fork. Leave to cool slightly.
Step 3: Add flour and mix and knead thoroughly with a spoon. Then knead with your hands into a uniform dough. The dough will be slightly sticky – if it’s too sticky (which may depend on the type of potatoes), add more flour.
Step 4: Transfer the dough to a lightly floured surface or board and divide into several parts (smaller portions make it easier to form kopytka). From each part, form a finger-thick roll, gently rolling it in flour. Gently flatten the formed roll and cut it into diagonal pieces several centimeters long „kopytka.”
Step 5: In a large pot, bring salted water to a boil. Reduce the heat immediately after it boils. Cook kopytka in batches, a few at a time. Carefully put them in the water and gently stir with a spoon so they don’t stick to the bottom of the pot. Cook for about 2-3 minutes after they float to the surface. Remove with a slotted spoon and transfer to a plate.
Step 6: Enjoy immediately after preparation.
