Egg rolls are a simple and quick-to-prepare carb-free bread.
The ready rolls can be stored for several days – just place them in the refrigerator in a tightly sealed container with baking paper between each.
Egg rolls are extremely versatile and pair well with toppings of all flavors. I made these simple flourless rolls with eggs and light cream cheese. You can replace the cheese with yogurt or cream.
Eggs are a rich source of complete protein, many vitamins, and minerals. The protein in eggs is standard, meaning it contains all amino acids, including those essential ones that the body cannot produce on its own.
Light cream cheese should not contain preservatives and stabilizers. Proteins in dairy are better absorbed by the body than those in meat.
Furthermore, light cream cheese provides the body with valuable microelements, including calcium, necessary for maintaining good bone health.

Ingredients for egg rolls (about 10-15 pieces):
- Chicken egg 3 pieces (150 g)
- Light cream cheese 4 tablespoons (60 g)
- Salt
Preparation of egg rolls:
Step 1: Break the eggs – separate the whites from the yolks and place them in two containers (carefully add the whites to a clean and dry high container, e.g., a blender container – there must not be even a trace of yolk). Add a pinch of salt to the whites and beat them into stiff peaks using a mixer or kitchen whisk.
Step 2: Add the cheese to the yolks and mix and mash thoroughly until a uniform mass is obtained.
Step 3: Combine the egg white foam with the yolk mass.
Step 4: Preheat the oven to 180°C. Use a spoon to lay out the mixture on a baking tray lined with baking paper (1 tablespoon per roll). Keep a few centimeters between each roll. Put in the preheated oven for about 15-20 minutes. Be careful not to burn the rolls. Turn off the oven when they are golden brown. Leave them in the oven for a moment.
Step 5: Eat warm or cold. Store in the refrigerator in a closed container for a maximum of 3-4 days (with baking paper between each). Rolls can be reheated in a toaster, on a pan, or in the oven.
