Ingredients
  

  • 200 g Cauliflower half a small
  • 30 g Chickpea flour 3 tablespoons
  • 30 g Corn flakes (e.g., Corn Flakes) 1 cup
  • 5 g Garlic 1 clove
  • Salt
  • Pepper
  • Smoked sweet paprika
  • Water

Method
 

  1. Wash the cauliflower, clean it, and divide it into smaller florets (the smaller the florets, the easier it is to find any browning or spoilage that needs to be cut off and discarded). Pour some water into a pan or pot, add a pinch of salt (about ⅓-1/2 teaspoon) and put in the cauliflower florets. Bring to a boil and then lower the heat. From the moment of boiling, cook for about 8-10 minutes, depending on the size of the florets. Stir and turn the florets occasionally. Towards the end, check the softness of the cauliflower with a knife or fork. After cooking, drain the cauliflower in a colander or remove it with tongs/a slotted spoon.

  2. In a bowl, mix the chickpea flour, peeled and pressed garlic, salt, pepper, and smoked sweet paprika. Add about ¼ cup of water and stir and mash until you get a smooth, lump-free consistency. Add more water if necessary.

  3. Preheat the oven to 200°C. Line a baking sheet with parchment paper. Finely crush the cornflakes (for convenience, you can place the flakes in a plastic bag and then crush them). Transfer the crushed flakes to a flat dish. Dip the cauliflower pieces in the batter and coat them in the cornflakes.

  4. Arrange the pieces on the baking sheet, leaving small gaps between each. Bake in the oven until golden and crispy, about 15-20 minutes.

  5. Transfer to a plate and serve.
