Buckwheat pancakes are an easy-to-prepare bread substitute, especially useful in low-carb, low glycemic index, and gluten-free diets. You can enjoy buckwheat pancakes on their own, with various toppings such as sauces or spreads, or use them as sandwiches or tacos. Reducing or eliminating standard bread can be an interesting solution, as there are many incredibly tasty and lighter substitutes that can improve health and physique.
To prepare these pancakes, you'll need buckwheat soaked in water for several hours, spices, a blender, and a non-stick pan. Be careful when frying, as they can break easily. Adjust the size of the pancakes to your liking.
If you want soft pancakes for tacos, for example, seal them in a container with a lid right after taking them off the pan. This way, they will steam and become soft and pliable, perfect for shaping or wrapping.
Buckwheat is a source of fiber, B vitamins, zinc, iodine, phosphorus, magnesium, calcium and iron.
