  • Banana 1 medium piece (100 g)
  • Carrot 1 medium or 2 small pieces (90 g)
  • Natural yogurt 3% 2 tablespoons (50 g)
  • Chicken egg 1 piece (50 g)
  • Flour (e.g., corn or rice) 4 tablespoons (40 g)
  • Calorie-free sweetener, e.g., erythritol 1 teaspoon (10 g)
  • Baking powder 1 teaspoon (4 g)
  • Oil 1 teaspoon (5 g)

Step 1: Wash the banana, peel it, and mash it with a fork. It’s best to use a very ripe banana in this recipe, which will be much sweeter (if you don’t use such a banana, you might need to add a bit more sweetener). Wash, peel, and grate the carrot on a coarse grater.

Step 2: In a bowl, combine the banana, carrot, yogurt, flour, sweetener, and baking powder. Crack the egg into the mixture and mix thoroughly until all ingredients are combined.

Step 3: Heat a non-stick frying pan over medium heat. Warm and spread small amounts of oil in the pan to fry several pancakes at a time.
