Yeast pancakes with apples are a taste of my childhood. My great-grandmother often made them for lunch. After many attempts, I managed to recreate this wonderful taste in a diet-friendly way.
Yeast pancakes are simple and quick to prepare. They are really delicious and low in calories. They taste great on their own or with various toppings like jams, sweet sauces, or peanut butter.
Apples are rich in numerous nutrients and have invaluable health benefits. Additionally, they contain a lot of fiber, which regulates bowel function. Boron in apples helps improve concentration, memory, and the electrical activity of our brain and strengthens bones.

Ingredients for yeast pancakes with apples (about 8-12 pieces):

  • Wheat flour 7 tablespoons (70 g)
  • Apple 1 small or 1/2 medium (70 g)
  • Egg 1 piece (50 g)
  • Milk 0,5% 1/4 cup (50 g)
  • Calorie-free sweetener e.g. erythritol 3 tablespoons (30 g)
  • Fresh yeast / Instant yeast 1/10 block (10 g) / 1 teaspoon (3 g)
  • Coconut oil or other oil 1 teaspoon (5 g)

Preparation of yeast pancakes with apples:

Step 1: Heat the milk to a lukewarm temperature (about 30°C). In a bowl, place the flour, milk, sweetener, and yeast (instant or crumbled fresh). Add the egg and mix thoroughly with a spoon until you get a thick, sticky, and smooth batter (without lumps).

Step 2: Leave the dough in the bowl and cover it lightly with greased plastic wrap or a cloth. Set the dough aside to rise in a warm place for about 1 hour, e.g., in an oven preheated to 35°C (place in the turned-off oven).

Step 3: After the indicated time, prepare the remaining ingredients. Wash and quarter the apple. Peel and core it. Cut each quarter in half lengthwise, then slice it crosswise into fairly thin slices. Add the apple slices to the bowl with the dough. Mix well with a spoon.

Step 4: Heat a non-stick pan over moderate heat. Melt and spread small amounts of oil over the entire surface to fry several pancakes at a time. Spoon portions of the batter and fry on low heat. Cook all the pancakes until they are golden and slightly risen, about 2-3 minutes per side. Transfer the finished pancakes to a plate.
