Ingredients for pumpkin yogurt pancakes (about 5-7 pieces):
- Pumpkin 1/5 medium piece (150 g)
- Flour (e.g. wheat or rice) 1/2 cup or 5 tablespoons (50 g)
- Egg 1 small (50 g)
- Natural yogurt 3% 2 tablespoons (50 g)
- Calorie-free sweetener e.g. erythritol 3 tablespoons (30 g)
- Baking powder 1/2 teaspoon (2 g)
- Oil 1 teaspoon (5 g)
- Vanilla flavoring
Preparation of pumpkin yogurt pancakes:
Step 1: Wash and dry the pumpkin. Cut a piece, remove the fibers and seeds. Peel the skin (place the piece on a cutting board and peel downward with a knife) and grate on a small-hole grater. In a bowl, combine the pumpkin, yogurt, and a few drops of vanilla flavoring. Add the egg and mix thoroughly until well combined.
Step 2: In another bowl, combine the flour, sweetener, and baking powder. Mix well.
Step 3: Combine the pumpkin mixture with the dry ingredients. Mix thoroughly until you get a smooth batter without lumps.
Step 4: Heat a non-stick frying pan over medium heat. Spread small amounts of oil across the pan surface to fry a few pancakes at a time (1 large spoonful of batter per pancake). Fry the pancakes covered until golden brown, about 2-3 minutes per side. Flip to the other side only when the batter sets. Place the finished pancakes on a plate.
Step 5: Enjoy warm or cold.
