Overnight oatmeal is a great option for people who don’t have much time to prepare a meal in the morning. It can be eaten (warm or cold) at home or taken to go.
Oat flakes, thanks to being soaked overnight, become easily digestible and very filling, and additionally aromatic due to the chosen additives. The first time I heard (or rather read) about overnight oatmeal was a few years ago when I came across a recipe in the book „Healing with Whole Foods: Asian Traditions and Modern Nutrition” by Paul Pitchford.
The nutty overnight oatmeal from that book was delicious, but I prefer sweeter overnight oatmeals. When it comes to creating overnight oatmeals, only our imagination can limit us…
You can soak oat flakes in water, cow’s milk, or any plant milk. The oatmeal can be very thick or more liquid. There are many possibilities for additives, but the most interesting, in my opinion, are (besides those used in this recipe): cocoa, chia seeds, peanut butter, raisins, dates, cinnamon, and coffee.

Ingredients for overnight coconut oatmeal:

  • Oat flakes 3 tablespoons (30 g)
  • Coconut milk 1/2 cup (100 g)
  • Coconut flakes 2 tablespoons (10 g)
  • Calorie-free sweetener, e.g., erythritol 2 tablespoons (20 g)
  • Vanilla flavoring
  • Water

Step 1: In a bowl or jar, put the oat flakes, coconut flakes, and sweetener. Mix. Add coconut milk, a few drops of vanilla flavoring, and optionally some water (adjust the amount to cover the dry ingredients). Mix thoroughly until all the ingredients are well combined.

Step 2: Cover the container with plastic wrap or close it and refrigerate for several hours, preferably overnight. The flakes will swell during this time, and the flavors will blend well.

Step 3: The oatmeal is ready to eat after taking it out of the refrigerator. Eat it cold or warmed up.
