An intensely chocolate and nut flavor in a velvety, delicate pudding… Sounds appetizing, right? A few days ago, I spontaneously prepared this pudding with products I bought for entirely different dishes. I expected it to be tasty, but it impressed me beyond my expectations.
Homemade chocolate-nut pudding is simply sensational in taste. It is definitely the best pudding I’ve ever had.
Chocolate pudding with nuts is a great idea for a delicious and, above all, healthy dessert, as well as an indispensable addition to many sweet meals, such as cakes, pancakes, oatmeal, or yeast buns.
Cocoa is a treasure trove of antioxidants that prevent many diseases. Cocoa beans are a source of many vitamins, microelements, and healthy fats.
Peanut butter is an incredibly rich source of antioxidants, protein, healthy fats, fiber, and many vitamins and minerals.

Ingredients for homemade chocolate and nut pudding:

  • Peanut butter 1 tablespoon (20 g)
  • Dark cocoa 1 tablespoon (10 g)
  • Peanuts 1 tablespoon (10 g)
  • Milk 0,5% almost 2/3 cup (150 g)
  • Butter 1 teaspoon (5 g)
  • Egg yolk 1 piece (20 g)
  • Cornstarch / Potato starch 1 tablespoon (10 g)
  • Calorie-free sweetener, e.g. erythritol 2 tablespoons (20 g)
  • Chocolate flavoring optional

Step 1: Finely chop the peanuts.

Step 2: In a small saucepan, place the egg yolk (use the egg white in another meal), peanut butter, butter, cocoa, sweetener, and a few drops of optional chocolate flavoring. Pour half of the prepared milk into the saucepan.

Step 3: Add starch to the rest of the milk. Mix thoroughly until smooth (no lumps).

Step 4: Set the saucepan over medium heat. Heat the contents, constantly stirring with a kitchen whisk or fork. It’s important to achieve a smooth and even consistency. When the saucepan’s contents start to simmer gently – reduce the heat and start pouring the milk with added starch in a thin stream (stir again just before pouring to ensure nothing is left at the bottom), continuously stirring at a medium pace with a kitchen whisk or spoon. Once all the ingredients are combined, keep stirring and increase the heat to medium. Stir the pudding until it boils and thickens. After a moment, turn off the heat. The pudding should not have any lumps. If lumps appear, try to get rid of them by mixing more thoroughly and crushing with a whisk or spoon.

Step 5: Transfer the ready pudding to a bowl. Sprinkle with nuts. Enjoy it warm or cold.
