Ingredients for chocolate risotto with yogurt:
- Basmati rice 5 tablespoons or 1/2 packet (50 g)
- Milk 2% just under 1/2 cup (100 g)
- Natural skyr yogurt 1/2 small container (70 g)
- Calorie-free sweetener e.g. erythritol 2 tablespoons (20 g)
- Dark chocolate 85% 2 pieces (10 g)
- Dark cocoa 1 tablespoon (10 g)
- Salt
- Water
Preparation of chocolate risotto with yogurt:
Step 1: Rinse the rice thoroughly in a kitchen sieve under running cold water or place it in a bowl and fill it with water, stir, and drain repeatedly until the water is no longer cloudy.
Step 2: Place the rinsed rice in a saucepan and add water in a 1:1 ratio (water:rice). Add milk, sweetener, and a pinch of salt. Mix well. Bring to a boil and then reduce the heat significantly. Cook covered for about 15 minutes on very low heat, stirring occasionally.
Step 3: Towards the end of cooking, add the chocolate. The risotto is ready when it has thickened considerably, and the rice is soft but not falling apart.
Step 4: Remove from heat. After a moment, add the cocoa and yogurt. Mix thoroughly.
Step 5: Transfer to a convenient dish. Enjoy warm or cold.
