Chilaquiles is a very popular dish in Mexican cuisine, traditionally eaten for breakfast or dinner. It typically consists of crispy tortilla chips served in a red tomato and chili sauce, topped with cheese and onions.
My version of chilaquiles is slightly different from the classic one – it’s much milder in taste and significantly easier to prepare.
To make this delicious meal, you’ll need tortilla, egg, milk, cheese, tomato paste, sour cream, and spices – all easily accessible in most stores.
Eggs are a great source of high-quality protein and numerous essential vitamins and minerals.

Ingredients for microwave chilaquiles:

  • Microwave tortilla nachos (check the recipe)
    • Tortilla (wrap) – 1 piece (62 g)
    • Olive oil – 1 teaspoon (5 g)
    • Salt
    • Herbal pepper
    • Basil
    • Chili
    • Smoked sweet paprika
  • Egg – 1 piece (50 g)
  • Yellow cheese – 1 slice or small piece (10 g)
  • Milk 2% – 2 tablespoons (10 g)
  • Tomato paste – 1 teaspoon (15 g)
  • Sour cream 12% – 1 teaspoon (10 g)
  • Salt
  • Pepper
  • Chili
  • Smoked sweet paprika

Step 1: Prepare the nachos (check the recipe).

Step 2: Grate or finely chop the cheese. Crack the egg into a small bowl. Add the milk and mix thoroughly with a fork, breaking the yolk. Season with salt, pepper, and chili, then mix again. Next, add the cheese and tomato paste, stirring and mashing everything until fully combined. Gently crush half of the nachos and mix them into the bowl. Microwave for about 1-2 minutes (depending on the microwave’s power). Remove when the egg is set. After taking it out of the microwave, top with the remaining nachos and sour cream.
