Wash the kiwi, peel off the skin, and slice it into rounds.
Wash the eggs with warm water, dry them, and crack them open – carefully separate the whites (ensure there's not even a bit of yolk) into a clean and dry tall container, like a blender jug, and the yolks into a bowl. Add a pinch of salt to the whites and beat with a mixer or a kitchen whisk until stiff peaks form.
In a separate bowl, mix the yolks with milk and sweetener.
Gently combine the beaten egg whites with the mixed yolks. Stir carefully with gentle movements.
Heat and spread the oil over the entire surface of a pan. After a moment, transfer the egg mixture to the pan and smooth it from the top.
Cook on low heat, covered. After about 5 minutes, flip it to the other side and cook for about 2-3 more minutes. Be careful not to burn the omelette.
Transfer the cooked omelette onto a plate. Arrange the kiwi slices on top. Eat immediately after preparation.
