Wash and cut the apple into quarters. Peel the skin and remove the seeds. Cut each quarter lengthwise in half, then slice them crosswise into thin slices.
In a bowl, mix the flour, sweetener, baking powder, and cinnamon.
In a tall container, such as a blender jug, crack the eggs. Whip them with a kitchen whisk or mixer. After a while, add yogurt and vanilla food flavoring.
Then gradually add the dry ingredients, mixing continuously.
Once the ingredients are combined, add the sliced apple. Mix and set aside for a moment.
Heat a pan over medium heat. Evenly spread the oil over the pan's surface. Transfer the mixture to the heated pan and cook over low heat, covered, for about 4 minutes on each side. Be careful not to burn it.
Transfer to a plate. Enjoy warm or cold.
