Ingredients for pumpkin bread (approx. 10 x 25 cm loaf pan):

  • Pumpkin 1/2 medium (600 g)
  • Natural skyr yogurt 1 package (150 g)
  • Egg 1 piece (50 g)
  • Flour (e.g., wheat or rice) 2 cups (300 g)
  • Calorie-free sweetener, e.g., erythritol 1 cup (150 g)
  • Baking powder 1 teaspoon (4 g)
  • Baking soda 1 teaspoon (4 g)
  • Salt

Preparation of pumpkin bread:

Step 1: Wash and dry the pumpkin. Then cut a piece, removing the fibers and seeds. Peel it (place the piece on a board and peel downwards with a knife) and cut it into similar-sized pieces. Place the pumpkin pieces on a baking sheet lined with parchment paper. Season with a pinch of salt. Put in a preheated oven at 200°C and bake until soft, about 15-20 minutes.

Step 2: In a bowl, mix flour, sweetener, baking soda, and baking powder thoroughly.

Step 3: Transfer the slightly cooled pumpkin to a blender container. Add the yogurt and egg. Blend until smooth and uniform.

Step 4: Add the blended mixture to the bowl with dry ingredients and mix thoroughly using a spoon or spatula. The mixture should be free of lumps.

Step 5: Transfer the batter to a parchment-lined loaf pan and place it in a preheated oven at 180°C. Bake until risen and browned, about 50-60 minutes. Remove from the oven and let cool.

Step 6: Remove the bread from the pan and slice only after it has completely cooled. Enjoy cold or warmed.
