Ingredients for coconut oatmeal with strawberry purée:

  • Oat flakes 5 tablespoons (50 g)
  • Strawberries, fresh or frozen 1 large handful (100 g)
  • Coconut milk about 1/2 cup (100 g)
  • Calorie-free sweetener, e.g. erythritol 2 tablespoons (20 g)
  • Water

Step 1: Pour 0.5-1 cm of water into a pan and add the strawberries. Heat on medium heat. Stir and crush the strawberries occasionally with a wooden kitchen spatula. Meanwhile, prepare the other ingredients. Cook the strawberries over low heat until they reach a puree-like consistency, about 10-15 minutes. If necessary, add a little water during cooking or increase the heat to evaporate any excess. Towards the end of cooking the strawberries, add half of the sweetener and mix thoroughly. Heat for a moment longer to ensure the sweetener is fully dissolved.

Step 2: Place the coconut milk and water in a saucepan. Adjust the amount of water so that it is roughly equal to the coconut milk. Mix and bring to a boil. Then reduce the heat, add the oat flakes, and cook over low heat for about 5-10 minutes, depending on the consistency you want for your oatmeal. If necessary, add a little water during cooking. Stir occasionally. Towards the end, add the remaining sweetener and mix thoroughly.
