Ingredients for chocolate pumpkin cake:

  • Pumpkin 1 piece (200 g)
  • Egg 1 piece (50 g)
  • Rice flour 4 tablespoons (40 g)
  • Unsweetened cocoa powder 1 tablespoon (10 g)
  • Calorie-free sweetener e.g. erythritol 5 tablespoons (50 g)
  • Coconut oil or other oil 1 teaspoon (5 g)
  • Baking powder 1/2 teaspoon (2 g)
  • Salt

Step 1: Wash and dry the pumpkin. Then cut a piece and remove the fibers and seeds. Peel it (place the piece on a cutting board and peel it downwards with a knife) and grate it on a medium grater.

Step 2: Transfer the grated pumpkin to a small ovenproof dish. Add the egg and oil. Mix thoroughly.

Step 3: Next, add the flour, cocoa, sweetener, baking powder, and a pinch of salt. Mix and blend until the ingredients are combined (without lumps). Smooth the top of the mixture. Place it in an oven preheated to 180°C for about 20-30 minutes. Remove when the cake rises slightly and cracks on top.
