Buckwheat pancakes
Savory buckwheat pancakes are a great alternative to bread. How to make gluten-free buckwheat pancakes? Discover a simple recipe for buckwheat pancakes!
Buckwheat pancakes are an easy-to-prepare bread substitute, especially useful in low-carb, low glycemic index, and gluten-free diets. You can enjoy buckwheat pancakes on their own, with various toppings such as sauces or spreads, or use them as sandwiches or tacos. Reducing or eliminating standard bread can be an interesting solution, as there are many incredibly tasty and lighter substitutes that can improve health and physique.
To prepare these pancakes, you’ll need buckwheat soaked in water for several hours, spices, a blender, and a non-stick pan. Be careful when frying, as they can break easily. Adjust the size of the pancakes to your liking.
If you want soft pancakes for tacos, for example, seal them in a container with a lid right after taking them off the pan. This way, they will steam and become soft and pliable, perfect for shaping or wrapping.
Buckwheat is a source of fiber, B vitamins, zinc, iodine, phosphorus, magnesium, calcium and iron.

Preparation of buckwheat pancakes:
Step 1: Prepare the buckwheat batter a day in advance. Place buckwheat in a bowl and cover with water. Adjust the amount of water so it’s a few centimeters above the buckwheat. Leave it for a few hours, ideally overnight. The next day, drain and refresh with new water about 2 cm above the buckwheat level.
Step 2: Transfer to a blender container, season with salt, a pinch of cinnamon, and curry. Blend to a smooth and homogeneous mass.
Step 3: Heat a non-stick dry pan. After a while, pour some batter onto the pan. Cook over medium heat, covered, until set, about 3-5 minutes on each side. Repeat until all batter is used.
Step 4: Serve the pancakes on a plate, hot or cold.
