Ingredients for banana cake:
- Banana 1 medium piece (100 g)
- Natural skyr yogurt 2/3 container (100 g)
- Flour (e.g. rice, wheat or other) 3 tablespoons (30 g)
- Egg 1 piece (50 g)
- Calorie-free sweetener such as erythritol optionally 3 tablespoons (30 g)
- Baking powder 1/2 teaspoon (2 g)
- Salt
Preparation of banana cake:
Step 1: Wash the banana, peel it, and mash it with a fork. Place the banana and yogurt in a bowl. Add the egg. Mix and beat until combined.
Step 2: Then add the flour, sweetener, baking powder, and a pinch of salt. Mix and beat again until a smooth consistency is obtained (without flour lumps).
Step 3: MICROWAVE VERSION: Place the mixture in a microwave-safe dish and microwave for about 3-5 minutes (depending on the power of your microwave). Check from time to time and test the doneness of the cake. Remove from the microwave when the cake rises and is dry on top. After removing the dish from the microwave, you can turn the cake onto a plate: flip the dish upside down and shake gently.
OVEN VERSION: Place in an oven preheated to 200°C. Bake until set and browned, about 25-35 minutes.
