Pancakes are easy and quick to prepare and truly delicious. They can be enjoyed plain or with various toppings like honey, maple syrup, fresh fruits, peanut butter, etc.
Diet American pancakes are a tasty and healthy alternative to traditional fritters. The flour used, especially if you choose whole grain, provides fiber, B vitamins and minerals. Eggs enrich the pancakes with high-quality protein and vitamins, including A, D, E, K, as well as lutein and zeaxanthin, which support eye health. Erythritol, a low-calorie sweetener, is safe for people with diabetes and does not raise blood glucose levels, making it an ideal sugar substitute.

Ingredients for American pancakes (about 5 pieces):

  • Wheat flour 7 tablespoons (70 g)
  • Egg 1 piece (50 g)
  • Milk 2% 3 tablespoons (30 g)
  • Clarified butter 1 teaspoon (4 g)
  • Low-calorie sweetener like erythritol 3 tablespoons (30 g)
  • Baking soda 1/2 teaspoon (2 g)
  • Salt

Step 1: Crack the egg into a tall container, like a blender jar, and gently beat it with a mixer or a kitchen whisk.

Step 2: Add the milk and mix again. Then gradually add the dry ingredients: flour, baking soda, sweetener, and a pinch of salt. Continue mixing until the ingredients are combined and you get a smooth but fairly thick batter. Let the batter sit for a moment to thicken.

Step 3: Heat a non-stick pan over moderate heat. Melt and spread small amounts of butter over the entire surface of the pan to cook several pancakes (1 large spoonful of batter per pancake). Cook the pancakes until they turn a light golden color, about 2-3 minutes per side. Flip them only when the batter has set and bubbles appear on the surface. Transfer the cooked pancakes to a plate.
