These tofu pancakes were created entirely by accident when I had some leftover tofu in the fridge and craved something sweet.
Adding lemon juice to tofu creates a curd substitute. That's precisely what I used in my tofu pancakes recipe, giving them a slightly "curd-like" flavor.
The pancakes are light, delicate, and really tasty. They're perfect as a nutritious dessert or a light meal. I ate them plain, and they tasted great, but you can enjoy them with various toppings like jam, fresh fruits, peanut butter, sweet powder made from sweetener, or chocolate avocado cream.

- Drain the tofu, crumble it by hand, and place it in a blender container. Sprinkle with lemon juice and mix. Then add milk (any plant-based milk), flour, sweetener, baking powder, and a little vanilla flavoring. Blend until you get a thick mass with a uniform consistency.

- Heat a pan over medium heat. Dissolve and spread small amounts of oil on the pan to fry a few pancakes. Lay out about 1 tablespoon of batter (for 1 pancake). Flatten the pancakes from the top and fry for about 1-2 minutes on each side until golden brown. Transfer the cooked pancakes to a plate.

- Enjoy warm or cold.
