In a bowl, place the oil. Season to taste with salt and pepper. Mix well.
Clean the meat and cut it into smaller pieces. Put it in the bowl with the oil and mix thoroughly.
Heat the pan over medium heat. After a moment, add the meat. Fry until properly cooked and slightly browned, about 8-10 minutes, stirring occasionally. Prepare the remaining ingredients while frying.
In a bowl, place the tomato paste, yogurt, sweetener, and a pinch of salt. Mix and crush thoroughly until combined. Grate or finely chop the cheese.
Cut the tortilla in half.
When the meat is ready– heat a dry pan over medium heat. Place half of the tortilla on the hot pan. Immediately evenly spread the fried meat and cheese on the tortilla. Cover with the other half of the tortilla and press down. Fry over low heat until the tortilla slightly hardens and browns and the cheese melts, about 2-4 minutes on each side. Be careful not to burn the tortilla.
Then place it on a cutting board and cut into several pieces. Transfer to a plate and eat with the sauce.
