Ingredients
  

  • 100 g Chicken egg 2 pieces
  • 140 g Avocado 1 medium piece
  • 20 g Bacon 2 slices
  • Chives optional
  • Salt
  • Pepper

Method
 

  1. Preheat the oven to 200°C. Wash, dry, and cut the avocado in half lengthwise. Remove the pit and gently widen the pit area by scooping out some flesh with a spoon. The size of the hollows should match the size of the eggs.

  2. Place the avocado halves, skin side down, in a baking dish or on a baking sheet lined with parchment paper. Crack one egg into each hollow. Season with a pinch of salt and pepper. Place in the preheated oven for about 10-15 minutes. Remove when the egg whites are fully set. Meanwhile, prepare the remaining ingredients.

  3. Cut the bacon into small pieces. Fry the bacon in a heated pan until crispy, stirring occasionally.

  4. Place the avocado halves with eggs on a plate and sprinkle with bacon and optionally chopped chives.
