    Tip

    Tip: Taste your spice blend before tossing the potatoes — everyone's paprika and curry powder vary in strength, so a quick taste lets you adjust before it's on the fries rather than after.

    Cut strips evenly — uneven thickness means some burn before others crisp.
  1. Wash the potatoes well and cut into slices, then into even matchstick-shaped strips.

    Mix spices into the oil first for more even coating than sprinkling them on.
  3. In a small bowl, combine the olive oil with a pinch each of sweet paprika, hot paprika, turmeric, and curry powder. Mix well. Add the potato strips and toss thoroughly, making sure each piece is evenly coated in the seasoned oil.

  4. Tip

    Don't overcrowd the basket — crowding steams the fries instead of crisping them.
  5. Preheat the air fryer to 390°F (200°C). Arrange the fries in the basket in a single layer, making sure they don't touch , if the basket is too crowded, they won't crisp up properly, so cook in two batches if needed. Air fry for 12-18 minutes, depending on thickness and how well-done you like them. Halfway through, shake the basket or flip the fries so they brown evenly. Check them near the end to make sure they don't burn.

  6. Tip

    Salt while hot — it sticks better than salting after they cool.
  7. Once cooked, transfer to a plate and season lightly with salt.
